Lydia has 36 years of experience in the area of commercial bakery and confectionery and gum, more than 22 years with IFF and over 26 years of experience in the flavour industry. She was a lecturer cum instructor in commercial bakery & cake decoration for 3 years and a product developer in the pastries, cakes, Chinese Dim Sum in FMGC companies for 5 and a half years. Her areas of experience in application include an industrial focus in:
Confectionery - Gum, Chocolate, Cereal Bars, Soft coating, and Hard coating
Artisan Bakery - Pastries, Cakes, Breads, Pies, Tarts and Petit Four desserts
Commercial Bakery - Cookies, Biscuits, Crackers, Cakes, and Long Shelf Life Products such as Bread
She is also experienced in scaling up production of baked goods and confectionery, developing new formulation for confectionery and bakery, ingredients in bakery, emulsifier, improver, stabilizer, bakery enzyme in cake, bread, crackers, filling, chocolate, and new product development.
